‘Thank you’ is barely adequate to express sufficient appreciation for two extraordinary meals – dinner last night and lunch today. I hardly know where to start. The marriage of yesterday evening’s dishes – always surprising, packed full of flavor and so beautifully presented – with the champagnes of Piper-Heidsieck was a triumph in all respects. I’ve been lucky enough to attend a host of wonderful meals paired with some equally extraordinary champagnes – but last night’s experience was right up there amongst the most special. Not only were your dishes totally sublime, but the service was delivered with the utmost professionalism and, importantly, with buckets of natural charm. In fact, the entire collaboration between food, champagne, service, place and people couldn’t have been more successfully orchestrated.
